Zein is a natural plant protein extracted from corn (Zea mays), belonging to the prolamin class. It is found in the corn endosperm, accounting for about 45–50% of total corn protein. Zein is insoluble in water but soluble in aqueous alcohol solutions, which gives it unique application value in food, pharmaceutical, and industrial sectors.

Its amino acid profile is high in glutamic acid, leucine, and alanine but low in lysine and tryptophan, which is one of the key differences compared to common plant proteins such as soy protein or pea protein.
