Introduction: Dehydroacetic acid is widely found in the oils of many deep-sea fish, as well as in marine algae and some terrestrial plants. DHA is an omega-3 unsaturated fatty acid and an essential fatty acid for the body. It is highly unstable to light, oxygen, and heat, and is easily oxidized and degraded; therefore, antioxidants are usually added. Lecithin, dextrose, cyclodextrin, or inert gases can also be added to improve the stability of the formulation.

 

Applications: Dehydroacetic acid is an organic synthesis intermediate, a toughening agent, and a broad-spectrum food preservative. Since its antibacterial properties were discovered in 1940, it has gained attention in many countries and has been gradually permitted for use in food preservation. As a food additive, dehydroacetic acid is permitted in cheese, butter, margarine, soft drinks, fermented milk and lactic acid bacteria beverages, soy sauce, fillings, etc. Sodium dehydroacetate is generally used as a food additive. It is also used in daily cosmetics, textile products, medicines (such as for the treatment of tinea), and dental materials for preservation.
