Introduction: α-Methylcinnamaldehyde is a pale yellow, transparent liquid with a strong spicy, floral aroma, reminiscent of cinnamon, and a sweet taste. It is soluble in ethanol, propylene glycol, and non-volatile oils, but insoluble in glycerol and water. Boiling point: 148℃ (3600 Pa), flash point: 79℃.
Applications: α-Methylcinnamaldehyde is mainly used in the formulation of spice flavorings and in combination with cinnamaldehyde as a fixative in fragrances. It is also used in organic synthesis.
